Recipe: No-Bake Ritz S’mores Cookies
This recipe makes about 24-30 cookies, depending on how much marshmallow creme you use.
Ingredients:
- 48 Ritz Crackers (about 1.5 sleeves from a standard box)
- 7 ounces (approx. 200g) Marshmallow Creme or Marshmallow Fluff
- 24 ounces (approx. 680g) Chocolate Melting Wafers (like Ghirardelli melting wafers, CandiQuik, or almond bark). Milk chocolate or semi-sweet work best.
- Optional Toppings:
- 1/2 cup Graham Cracker Crumbs
- 1/2 cup Mini Marshmallow Bits
- 1/2 cup Mini Chocolate Chips
- Sprinkles (for festive occasions!)
Equipment:
- 2 large baking sheets
- Parchment paper or wax paper
- Microwave-safe bowl
- Spoon or small offset spatula for spreading marshmallow creme
- Tongs or a fork for dipping
- Airtight container for storage
Instructions:
- Prepare your workspace:
- Line 2 large baking sheets with parchment paper or wax paper. This will prevent the cookies from sticking and make cleanup easy.
- Make the cracker sandwiches:
- Lay half of the Ritz Crackers (24-30 crackers) in a single layer on the prepared baking sheets.
- Place 1 to 2 teaspoons of Marshmallow Creme onto the center of each cracker. Don’t overload, as it can ooze out during dipping.
- Top each cracker with another Ritz Cracker, gently pressing down to create a sandwich and evenly distribute the marshmallow creme to the edges.
- Melt the chocolate:
- Place the Chocolate Melting Wafers in a microwave-safe bowl.
- Melt according to package directions (usually in 30-second intervals, stirring well after each, until smooth and completely melted). Stirring frequently helps prevent burning.
- Dip the cookies:
- Using tongs or a fork, carefully pick up one Ritz cracker sandwich.
- Dip the entire sandwich into the melted chocolate, ensuring it’s fully coated.
- Gently tap the tongs or fork against the side of the bowl to remove any excess chocolate. You want a smooth, thin coating.
- Place the dipped cookie onto the lined baking sheet.
- Add toppings (optional):
- If using optional toppings (graham cracker crumbs, mini marshmallows, mini chocolate chips, sprinkles), sprinkle them over the chocolate-coated cookie immediately after dipping, while the chocolate is still wet.
- Set and Store:
- Repeat with the remaining Ritz cracker sandwiches.
- Allow the cookies to set up until the chocolate is hard. This can take about 30-60 minutes at room temperature, or you can place the baking sheets in the refrigerator for 15-20 minutes to speed up the process.
- Once the chocolate has hardened, carefully peel the cookies off the parchment/wax paper.
- Store the Ritz S’mores Cookies in an airtight container at room temperature for up to 5 days. They are best enjoyed within the first few days for optimal freshness and texture.
