  • 3 (8-ounce / 226g each) packages full-fat cream cheese, softened
  • 1 cup (200g) granulated sugar
  • 1/4 cup (25g) unsweetened cocoa powder
  • 1/4 cup (60ml) sour cream, room temperature
  • 1 tbsp (15ml) vanilla extract
  • 1 tsp red gel food coloring
  • 3 large eggs, room temperature

For the Cream Cheese Frosting (Optional, but highly recommended):

  • 1/2 cup (113g) unsalted butter, softened
  • 1 (8-ounce / 226g) package full-fat cream cheese, softened
  • 3-4 cups (360-480g) powdered sugar, sifted (to taste)
  • 1 tsp vanilla extract
  • 1-2 tbsp milk or cream (if needed for consistency)

Important Note: How to Heat-Treat Flour (for edible cookie dough safety):

Raw flour can contain bacteria. To make it safe for raw consumption: Oven Method: Spread the flour thinly on a baking sheet. Bake at 300°F (150°C) for 5-7 minutes, or until it reaches 160°F (71°C) internally. Let it cool completely before using. Microwave Method: Microwave the flour in a microwave-safe bowl in 30-second increments, stirring after each, until it reaches 160°F (71°C). Let it cool completely.

Instructions:

1. Prepare the Cookie Crust:

  1. Preheat oven to 350°F (175°C) if baking the crust (optional, but gives a crispier base).
  2. In a medium bowl, combine the crushed Oreo cookies and melted butter. Mix until well combined.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan. You can use the bottom of a glass to help compact it.
  4. Optional: Bake the crust for 8-10 minutes. This makes it sturdier and crispier. Let it cool completely. If not baking, refrigerate for at least 15 minutes to firm up.
