Orange Crush Poke Cake

Orange Crush Poke Cake 🍊🧡

This Orange Crush Poke Cake is a burst of sunshine in every bite! It’s incredibly moist, full of bright orange flavor, and gets its delightful “poke” texture and extra juiciness from an Orange Crush gelatin mixture. Topped with a fluffy, sweet whipped cream or Cool Whip, it’s a perfect dessert for summer gatherings, potlucks, or just a fun family treat.

Ingredients:

For the Orange Cake:

  • 1 box (approx. 432g) yellow cake mix (or white cake mix)
  • Ingredients needed for the cake mix (usually eggs, oil, and water or milk – check package directions)
  • Optional: 1 teaspoon orange extract (for an extra citrus boost)
  • Optional: A few drops of orange food coloring (to enhance the color)

For the Orange Crush Poke:

  • 1 package (approx. 85g) orange flavored gelatin (like Jell-O)
  • 1 cup (240ml) boiling water
  • 1 cup (240ml) Orange Crush soda, chilled

For the Topping:

  • 1 tub (approx. 8 ounces / 225g) Cool Whip, thawed
  • OR: 2 cups (480ml) heavy cream, chilled, whipped with 1/4 cup (30g) powdered sugar and 1 teaspoon vanilla extract
  • Optional: Orange slices, orange zest, or M&M’s (orange, yellow, white) for garnish

Equipment:

  • 9×13 inch (23×33 cm) baking pan
  • Large mixing bowl
  • Electric mixer (handheld or stand)
  • Whisk
  • Fork or wooden skewer

Instructions:

1. Bake the Cake:

  1. Preheat Oven & Prep Pan: Preheat your oven to the temperature specified on the cake mix box (usually 350°F / 175°C). Lightly grease and flour your 9×13 inch baking pan.
  2. Prepare Cake Batter: In a large mixing bowl, prepare the yellow cake mix according to package directions, using the specified amounts of eggs, oil, and water/milk.
  3. Add Flavor/Color (Optional): If desired, stir in 1 teaspoon of orange extract and a few drops of orange food coloring into the batter for an enhanced flavor and brighter color.
  4. Bake: Pour the cake batter evenly into the prepared baking pan. Bake for the time recommended on the cake mix box, or until a toothpick inserted into the center comes out clean.
  5. Cool: Let the cake cool in the pan for about 15-20 minutes on a wire rack. Don’t cool it completely, as you want it still warm for the poke step.

2. Prepare the Orange Crush Poke Mixture:

  1. Dissolve Gelatin: In a medium bowl, combine the orange flavored gelatin with 1 cup of boiling water. Whisk until the gelatin powder is completely dissolved, about 2 minutes.
  2. Add Cold Soda: Stir in 1 cup of chilled Orange Crush soda. This adds an extra layer of fizz and orange flavor.

3. Poke and Soak the Cake:

  1. Poke Holes: While the cake is still warm (but not hot), use a fork or the blunt end of a wooden skewer to poke holes all over the top of the cake. Make sure the holes go almost to the bottom but don’t pierce through. Aim for holes about ½ to 1 inch apart.
  2. Pour Gelatin: Slowly and evenly pour the Orange Crush gelatin mixture over the entire poked cake, making sure it seeps into all the holes.
  3. Chill: Place the cake in the refrigerator for at least 3-4 hours, or preferably overnight, to allow the gelatin to set completely and the cake to absorb all the moisture.

4. Top and Garnish:

  1. Prepare Topping: Once the cake is completely chilled and the gelatin has set, spread the thawed Cool Whip evenly over the top of the cake. If making homemade whipped cream, do so just before topping.
  2. Garnish (Optional): Decorate the cake with fresh orange slices, orange zest, or colorful M&M’s for a fun presentation.
  3. Serve: Slice and serve chilled.

Tips for Success:

  • Don’t Overbake: A slightly under-baked cake is better for poke cakes, as it will absorb the liquid more readily and stay extra moist.
  • Chill Time is Key: Don’t rush the chilling process. The cake needs ample time for the gelatin to set and infuse properly.
  • Make Ahead: This cake is fantastic when made a day in advance, allowing the flavors to meld and the cake to become incredibly moist.
  • Storage: Store any leftover cake covered in the refrigerator for up to 3-4 days.

Enjoy this incredibly delicious and wonderfully vibrant Orange Crush Poke Cake!
